Nestled in the heart of the Surrey Hills the restaurant sits atop of Newland’s Corner, the haunt of the highwayman, Robert Newland, famous for it’s outstanding views overlooking the breadth of of the Surrey countryside.

​Some years later, since acquiring what was originally a transport cafe back in 1986, Carlo has continually rebuilt and expanded the premises over the years, going from cream teas to panna cotta.

"Al Dente makes you smile"

Born and raised in a small fishing town on the Italian Riviera, like most Italians Carlo’s love for food was inspired by his mother who would take him shopping in the street markets of Imperia before putting him to work in the kitchen. Learning the fundamentals and subtleties of the regional cuisine, he went on to graduate from the prestigious Ligurian school of catering before coming to England to share his love and talents, firmly establishing himself as one of Surrey’s most enduring and respected restaurateurs.
